1. The Thali Principle: Variety for Completeness

The traditional Indian thali is designed around the Ayurvedic principle of including all six tastes — sweet, sour, salty, pungent, bitter, and astringent — in one sitting. From a modern nutritional standpoint, this variety ensures a broad intake of macronutrients and micronutrients. A standard balanced thali covers carbohydrates (roti, rice), protein (dal, paneer, curd), healthy fats (ghee, nuts), and fiber (sabzi, salad).

2. Protein Gaps in Vegetarian Indian Diets

A common weakness of traditional Indian vegetarian diets is insufficient protein. ICMR recommends 0.8 to 1.0g of protein per kilogram of body weight for sedentary adults and 1.2 to 2.0g/kg for active individuals and athletes. A typical meal of 2 rotis, dal, and sabzi provides roughly 15 to 20g of protein — often well below requirements.
